It just stores the items out of the way - like storage within your hoard - so they aren't visible in your normal on-hand hoard. Which means you haven't got thousands of items to be combing through for everyday stuff, and also you can't accidentally use/trade/discard things you want to keep saved.

Burying food isn't a good idea in general because it will still expire, even if buried.
