When you freeze it with a Jellyfish, the lion becomes immortal, but unable to do anything - it cant breed, cant hunt, cant become a king or patroll. It doesnt need food nor toys and will never die, and you will be able to dress it up and customise it. You need a Frozen Slot for each frozen lion.

Mostly freezing is for keeping trophy/favorite lions forever; people do that to rare/expensive/important lions to keep them in the pride past their death time, and to be able to dress them up and customise them which you cannot do with lions stored in Dynasty.

Freezing reasons vary from person to person. I have a friend who froze a lion for her father in law I do believe that represented him. There are also mutations that die so if you want to keep them you have to freeze them. Again kind of varies from person to person.
