There's no official system for choosing until you're ready to retire your current king. From there, you can choose any male in your pride (from newborn to elder, though <3 will be aged up to 3 and >10.1 will be aged down to 8), and he will be your new king. If you have no males, you'll have to reroll your lion, meaning you'll get the same sort of lion as the ones you chose from when you joined.

You can retire any time for a fee of 10 GB, kings aged 15+ years can retire for free, and you're forced to retire him at 16 (though you can have his current looks transferred to your heir minus the mutation). If you choose to retire a second time within 30 days, you'll have to pay an extra fee of 15 GB in addition to the regular 10 GB fee.
