the posts you are linking to have HTML code on them. i don't know how to make them personally, however, there are plenty of resources to come by. (HTML commissions and CSS)

i'd recommend some of these for you to pick and try from:

Punny Side Up - Free CSS/HTML
Katie's Free CSS (+HTML)
honey's free html layouts

some of these have CSS templates to them as well, which are separate from post HTML and are for lioden dens.
when using HTML code, copy the code and then insert your text and images into the space which you're supposed to type in. if you need any guidance with these, feel free to hmu.

no HTML is fine as well! i've seen nice and neat threads with no html codes besides some basic HTML text coding and they look fabulous. its really up to you! i recommend you explore your options and browse through the CSS and HTML section of lioden's forum.

Yeah, like my auction, I use HTML and images. Sometimes, if you have good lions to sell, people come and not because of the auctions. You can find lots of HTML here!

My biggest issue is knowing where to put things. I found one of the free ones I like but it's very confusing. I see asterisks but I'm not sure where to put my text, lion links, etc

It's TOTALLY fine, I was like this too and mobile is hell! If it's a lion I recommend you use LioExt as it’s the only Lion upload image I’ve found. You can either use Imgur or Post images to upload the image, then put it in the URL in the second sentence!
